This is probably going to sound REALLY stupid... but:

on my '03 X, I have a towing package that came with it and the hitch is just a black bar support that says the words "HIDDEN HITCH" in white lettering... here's my question... WHY is it called a hidden hitch when you can clearly see it...?

I think because most of the hitch is hidden under the rear bumper.

you must not have the cool switch that makes it raise up and down to hide up in the bumper

Hidden is who made the hitch.
